Heat a splash of oil in a large frying pan over a medium-high heat. Add the beef mince (1 pack), onion (1) and spring onions (1/2 bunch) (reserve a handful of spring onions to garnish) and cook for 8 minutes. Break up the beef mince with a wooden spoon.

Stir in 2 tbsp of the ketjap manis (2 tbsp), the garlic (3 cloves) and chilli (1) (reserve 1 tsp of chilli to garnish) and cook for a further 6 minutes until the beef mince is crispy. Remove from the pan and set aside.

While the beef mince is cooking, bring a large saucepan of water to the boil. Add the nests of noodles (1 pack), remove from the heat and leave to stand for 5 minutes, according to the pack instructions, then drain.

Dissolve the chicken stock pot (1) in the boiling water (150 ml).

To the frying pan, add the noodles, peanut butter (2 tbsp), chicken stock and remaining ketjap manis (1 tbsp). Mix everything together until it evenly coats the noodles, creating a glossy sauce.

Add the noodles to four bowls, then evenly top the noodles with the beef mince. Scatter over the remaining spring onions and chilli and finish with ½ tbsp of the stir fry chilli topper (2 tbsp) on each bowl.
