Preheat the oven to 200°C/180°C fan/gas mark 6. Wash the potatoes (1.5 kg) and rub with a little oil and salt, then bake for 45 minutes-1 hour, until tender.

Meanwhile, heat half of the butter (35 g) in a large frying pan over a medium-low heat and add the onions (3) with a splash of oil and a pinch of salt. Cook for 15-20 minutes, stirring, until caramelised (add a splash of water if they’re starting to catch).

Halve the cooked potatoes and scoop the flesh into a bowl. Mix with the caramelised onions, the remaining butter (35 g) and the grated cheddar (100 g), reserving some to sprinkle on top.

Sprinkle with the top that seasoning (2 tbsp) and reserved cheese, then return to the oven for 10 minutes, until melted. Serve with the salad (80 g), dressed with a little oil and vinegar, if you like.
