Preheat the oven to 180°C/160°C fan/gas mark 4. Tip the lardons (1 pack) into a 20cm square cm baking dish and roast for 15 minutes, until golden and crisp. Carefully drain off any excess fat.

Meanwhile, whisk the eggs (8), double cream (150 ml), salt (1 tsp) and two thirds of the grated cheddar and mozzarella (100 g) in a large bowl until well combined. Stir through the cooked lardons, then pour the mixture back into the baking dish.

Bake for 25 minutes, until just set with a slight wobble in the centre. Top with the remaining cheese (50 g) and cook for a further 5 minutes, until melted. Remove from the oven and leave to cool slightly, then cut into 4 squares.

Switch the oven to the grill setting and lightly toast the bagel halves (4). Spread the bagels with the New York deli style cream cheese (1 tub) and top with the frittata and a spoonful of fiery pickles (as needed) and some rocket (as needed). Sandwich with the bagel tops and serve warm.
