Combine the sweet potatoes (600 g), eggs (3), flour (2 tbsp) and Cajun seasoning (2 tbsp) in a large bowl and mix to combine. Crumble in the salad cheese, reserving a little to serve, and season with salt and pepper.

Spoon tablespoonfuls of the mix into a lined air fryer basket, spray or drizzle with oil, then air fry at 180°C for 10 minutes. Flip and air fry for a further 5 minutes.

Serve with the spicy mango chutney (1 tbsp) and crumbled Greek salad cheese (200 g). Serve alongside a green salad, if you like.
