Method

step 1
Place the frozen berry mix (1 pack) in a large saucepan and thaw over medium heat. Stir in the sugar (150 g), orange juice and zest (1). Simmer gently for 10-15 minutes until the berries release their juices but still hold some shape.
step 2
Line a 1-litre pudding basin with cling film, leaving enough overhang to cover the top later.
step 3
Cut bread slices (10 slices) to fit the base and sides of the bowl, slightly overlapping to form a snug lining, and briefly dip each slice in the berry mix.
step 4
Pour the warm berry mixture into the bread-lined bowl (leaving some berries to use to decorate when serving). Cover the top with more bread slices, folding over the overhanging edges.
step 5
Place a small plate or lid on top and weight (e.g., a tin or jar) to help compress.
step 6
Refrigerate for at least 4-6 hours, preferably overnight, to allow the juices to soak fully into the bread.
step 7
Turn out the pudding onto a serving plate, top with the remaining berries and serve with cream (as needed).
