Rinse the bulgur wheat (120 g) under cold water.

Dissolve the flavour pot (1) in 500ml boiling water. Add the bulgur wheat and stock to a large-lidded saucepan. Bring to a simmer, then cover and cook for 15 minutes until most of the liquid has been absorbed. Drain, then allow to stand for 10 minutes then stir with a fork to separate the grains.

Combine the tomatoes (200 g), parsley (1 bunch), mint (1 bunch), peppers (1 pack) and spring onions (2) in a bowl. Once the bulgur has cooled, stir this into the bowl with the lemon juice (1) and 3 tbsp of extra virgin olive oil.

Add the king prawns (200 g)s to a bowl with the tomato purée (1 tbsp), chilli paste (1 tsp), smoked paprika (1/2 tbsp) and 1/2 tbsp of olive oil and mix well. Season with salt and then thread onto pre-soaked skewers. Transfer to a foil-lined tray for and grill 6 minutes, turning halfway, until cooked through.

Serve the prawn skewers with the tabbouleh and a scattering of pomegranate rubies (100 g).
