Whisk the egg whites (60 g) to stiff peaks in a clean bowl. Gradually add the sugar (100 g), 1 tbsp at a time, whisking continuously until you have a thick, glossy mixture that holds its shape. Quickly beat in the cream of tartar (1/4 tsp).

Pop the slices of chocolate roll (1) onto a large tinfoil-lined baking tray and add a scoop of ice cream (6 scoops) to each.

Preheat the grill to high. Using a spatula and working quickly, spread out and swirl the meringue mixture over the ice cream and sponge until each is completely covered.

Pop the tray under the grill for 2-3 minutes, until the tops are golden brown. Alternatively, use a blowtorch, if you have one. Serve straight away.
