Step 1
Make the purée by putting the apricots (12) , caster sugar (50 g) and M&S sparkling light British elderflower presse (30 g) into a saucepan. Cook down on a medium heat, stirring frequently until you have a thick, jam consistency. Store in a sterilised jar in the fridge – also great drizzled on yoghurt, ice-cream or mixed in with soda water.
Step 2
Shake 1 tbsp of the apricot purée, with M&S Distilled London dry gin (50 mL) , dry vermouth (15 mL) and ice cubes (1 handful) in a cocktail shaker.
Step 3
Garnish with fresh apricot (1) .
