Brussels sprouts , finely shredded

large orange , peeled, sliced

roasted almonds , chopped

flat leaf parsley , leaves picked

M&S Scottish smoked mackerel fillets

For the dressing

45 mL
M&S unfiltered extra virgin olive oil
15 mL
red wine vinegar
1 clove
garlic , crushed
as needed
chilli flakes
1 pinch
caster sugar

Method

Step 1
Soak the sliced onion (1) in a bowl of salted cold water for 10 minutes, then drain thoroughly.
Step 2
In a large bowl, mix the olive oil (45 mL) , vinegar (15 mL) , garlic (1 clove) , chilli flakes (as needed) , sugar (1 pinch) and season with salt to taste. Toss the sprouts in the dressing and set aside. Lightly season the orange (1) with salt and freshly ground black pepper.
Step 3
Gently toss the orange, almonds (40 g) , onion and parsley (25 g) into the sprouts (500 g) . Flake the mackerel (2) over the top and serve.
