Author's notes

Give the sausages enough time to brown in the pan – this allows them to develop a more intense flavour, which in turn enhances the rest of the casserole as you add the other ingredients.

Method

step 1
Heat a splash of oil in a large lidded pan. Add the sausages (2 packs) and cook over a medium-high heat for around 10-12 minutes, turning frequently, until nicely browned.
step 2
Add the soffritto mix (150 g) and cook for a further 2-3 minutes.
step 3
Dissolve the red wine stock pot (1) in the boiling water (400 ml).
step 4
Add the carrot (2), red wine stock and saucy beans (1 jar) to the pan. Stir, cover with the lid and simmer for 8-10 minutes.
step 5
Add the sticky figgy mustard (1 tbsp), then cook uncovered for another 5 minutes, until the sausages are cooked through and the carrots are tender.
step 6
Serve with crusty bread (as needed) or veggies on the side.
