Author's notes

Ensure you drain off any excess moisture from the cream cheese before incorporating into the icing, and be careful not to overmix – just gently work it into the icing. If it does go runny, pop in the fridge to help it firm up again.

step 1
Preheat the oven to 180°C/160°C fan/gas mark 4. Line a 20cm round cake tin with greaseproof paper.
step 2
Add the yogurt (1 pot) to a large bowl. Using the pot, measure 1 pot of oil (125 ml), 2 pots of caster sugar (250 g) and 3 pots of flour (250 g), adding to the bowl as you go. Add the baking powder (1 tsp) and crack in the eggs (3), then grate in the lemon zest (1) and orange zest (1).
step 3
Beat with an electric whisk until combined, then pour into the tin.
step 4
Bake for 50-55 minutes, until a skewer comes out clean when inserted into the centre and the cake is golden and springs back when gently pressed.
step 5
When the cake is almost ready, pop the marmalade (3 tbsp) in the microwave for 20 seconds to loosen.
step 6
Poke holes in the cake and use a pastry brush to spread over the marmalade. Allow to cool completely in the tin.
step 7
To make the icing, beat the butter (75 g) for 2-3 minutes until smooth and fluffy. Beat in the icing sugar (150 g) and 1 tsp each lemon and orange juice. Drain the cream cheese (100 g) of any excess water, then beat into the icing, being careful not to overmix. Pop in the fridge.
step 8
Spread the icing over the cooled cake then finish with some more lemon and orange zest, if you like.
