Gingerbread scones recipe

Recipe
Put a twist on your go-to scone recipe with this gingerbread version. In place of the usual fruit, it uses crystallised ginger, with a hint of mixed spice and warming ground ginger in the dough. Be careful not to overwork the dough when you’re bringing it together – this can prevent the scones from rising and make them tough. Marmalade makes a lovely accompaniment, cutting through the rich flavours, but you could equally serve with jam or simply plenty of butter.

Author's notes

If you’d prefer a gentler, less gingery flavour, swap the crystallised ginger for a handful of mixed dried fruit or even a spoonful of mincemeat. Prefer it fiery? Up the ground ginger to 2 tsp.

step 1
Preheat the oven to 220°C/200°C fan/gas mark 7.
step 2
Sift the flour (225 g) into a large bowl, then stir in the sugar (40 g), ground ginger (1 tsp) and mixed spice (1 tsp). Rub in the butter (75 g) with your fingertips until the mixture has the consistency of breadcrumbs. Stir in the crystallised ginger (60 g).
step 3
Add 3 tbsp milk (3 tbsp) and bring the mixture together with your hands. If needed, add a little more milk 1 tsp at a time, to form a soft, but not sticky, dough.
step 4
Use a floured rolling pin to roll out to a 3cm thickness. Cut out 8 scones with a 5cm pastry cutter (you may have to reshape the dough) and place on a baking sheet lined with greaseproof paper. Brush the scones with a little more milk.
step 5
Bake for 12-15 minutes, until well risen and golden. Once cooked, and while still hot, brush with the gingerbread syrup (1 tbsp). Serve warm with the salted butter (as needed) and marmalade (as needed), if you like.
