Author's notes

Ensure you rinse the noodles thoroughly once they’ve been cooked – this will reduce the amount of starch and stop them from clumping in the pan.

Method

step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Put the salmon fillets (4) on a baking tray lined with foil. Spoon over the mango and sweet chilli dipping sauce (100 g), turning to coat and season with a pinch of salt. Bake for 18-20 minutes, until the salmon is cooked through and the glaze is sticky and golden.
step 2
Meanwhile, prepare the rice noodles (1 pack) according to the pack instructions. Drain well and set aside.
step 3
Heat 1 tbsp oil in a large frying pan or wok over a high heat. Add the stir fry sweet pepper medley (1 pack) and cook for 3-4 minutes, tossing regularly, until just tender.
step 4
Add the noodles and pad Thai sauce (1 jar) to the pan. Toss everything together for 2-3 minutes until piping hot and evenly coated.
step 5
Divide the noodles between four bowls. Top with the sticky salmon fillets and spoon over any juices from the baking tray. Serve with the lime wedges (1) on the side for squeezing over.
