Author's notes

Watch the almonds carefully as they’re toasting in the pan – they can catch easily. You’re looking for a rich, golden-brown colour.

step 1
Preheat the oven to 200°C/180°C fan/gas mark 6.
step 2
Heat a large frying pan over a medium-high heat and cook the beef mince (1 pack), breaking it up with a spoon, until browned.
step 3
Stir in the tikka masala sauce (1 jar), Greek yogurt (150 g) and water (100 ml) and cook for 2-3 minutes, until combined. Spoon the mixture into a medium ovenproof baking dish. Loosen the pilau rice (2 packs) with a fork and spread it evenly over the top.
step 4
Bake for 15-20 minutes, until piping hot and lightly golden around the edges.
step 5
Meanwhile, toast the flaked almonds (25 g) in a dry frying pan for 1-2 minutes, until golden.
step 6
Scatter the biryani with the toasted almonds and pomegranate seeds (3 tbsp). Finish with coriander (as needed), if you like, and a dollop of yogurt (as needed).
