Author's notes

Ensure the dough is properly chilled before slicing and baking – this will help the biscuits keep their shape.

Method

step 1
Beat the butter (250 g) and sugar (125 g) together in a large bowl until smooth and creamy.
step 2
Add the flour (250 g), semolina (115 g), salt (1 tsp) and vanilla (1 tsp), then mix until a soft dough forms. Shape into a log about 8cm wide. Wrap and chill for 2 hours, or freeze for 20 minutes, until firm.
step 3
Preheat the oven to 180°C/160°C fan/gas mark 4. Slice the dough into 1cm-thick rounds and arrange on two lined baking trays. Bake for 15-17 minutes until lightly golden around the edges. Transfer to a wire rack and leave to cool completely.
step 4
While the cookies cool, draw eyes and a mouth onto the marshmallows (16) using the black writing icing (as needed). Use the red to create little noses.
step 5
For the glaze, mix the lemon juice (1) with the icing sugar (100 g) until smooth and thick enough to coat the back of a spoon. Spoon 1½ tsp over each shortbread and then top with one marshmallow each, placed near the back of the cookie. Draw on buttons using the green or blue icing, then use the black icing to create little arms.
