Author's notes

Assemble the Wellington up to 24 hours in advance and keep chilled. Glaze just before baking for the best finish.

step 1
Heat the olive oil (2 tbsp) in a large sauté pan over a medium heat. Add the garlic and herb butter (50 g) and, once foaming, add the leek (2). Cook for 8-10 minutes, stirring regularly, until softened.
step 2
Add the garlic (3 cloves) and thyme (4 sprigs) and cook for a further 2-3 minutes. Pour in the shellfish stock (200 ml), then add the rice (1 pouch). Stir gently and cook for 2-3 minutes, until the stock has been absorbed.
step 3
Remove from the heat and stir through the crème fraîche (3 tbsp) and dill (3 tbsp). Season well with salt and black pepper, then transfer the mixture to a tray and leave to cool completely in the fridge.
step 4
Meanwhile, unroll all 3 sheets of pastry (3 packs) onto a lightly floured (as needed) surface. Gently roll over each sheet with a rolling pin, then transfer to the freezer for 10 minutes to firm up.
step 5
Once the rice mixture has cooled, prepare the salmon. Using a sharp knife, make a cut across each fillet (2 packs) about a quarter of the way up from the thinner tail end, but don’t cut all the way through. Fold the thinner end underneath to create a more even thickness.
step 6
Lay both salmon fillets lengthways in the centre of one sheet of pastry. Season well and sprinkle over the lemon zest (1).
step 7
Spoon the cooled rice mixture over the salmon and gently press into an even layer.
step 8
Beat the egg (1) with the milk (2 tbsp). Brush the pastry around the salmon with the egg glaze. Lay the second sheet of pastry over the filling. Cut small slits in each corner to help the pastry wrap neatly around the salmon, then fold and press the edges together firmly to seal. Transfer to the freezer for 15 minutes to firm up.
step 9
Remove from the freezer and use a fork to crimp the edges. Using the remaining pastry, cut out star shapes in assorted sizes.
step 10
Brush the Wellington all over with the egg glaze, then arrange the pastry stars on top. Brush the stars with more glaze and sprinkle lightly with salt. At this stage, the Wellington can be chilled until ready to bake.
step 11
Preheat the oven to 200°C/180°C fan/gas mark 6. Bake on the middle shelf for 40 minutes, until the pastry is crisp and golden.
step 12
Leave to rest for 10 minutes before transferring to a serving platter. Slice thickly and serve with your favourite festive sides, if you like.
