step 1
First, make the base. Grease and line a 20cm loose-bottomed cake tin. Blitz the malted milk biscuits (250 g) to fine crumbs, then stir in the melted butter (110 g). Press firmly into the base of the tin and chill for 30 minutes.
step 2
To make the cheesecake, whisk the cream cheese (300 g), icing sugar (75 g), salted caramel sauce (100 g) and vanilla (1 tsp) until smooth. In a separate bowl, whip the double cream (300 ml) to soft peaks, then fold into the cream cheese mixture, along with the chopped malt balls (100 g).
step 3
Spoon over the chilled base and smooth the top. Chill for at least 4 hours, or overnight, until set.
step 4
Warm the remaining salted caramel (120 g) slightly until spreadable, then spoon over the cheesecake. Pile the malt balls (200 g) on top, arranging the different chocolates evenly across the surface. Chill for 15 minutes before slicing and serving.
