Heat a good glug of oil in a large, deep, lidded saucepan or casserole dish over a medium heat. Add the onions (2) and cook for 3-5 minutes, until softened. Stir through the smokehouse BBQ seasoning (2 tbsp) and cook for 30 seconds, until fragrant.

Dissolve the stock pot (1) in the boiling water (400 ml).

Stir in the squash (1 pack), chopped tomatoes (1 tin), smokehouse sauce (250 g) and stock. Nestle the chicken thighs (1 pack) into the sauce and bring to a gentle simmer. Cover with a lid and cook on a low heat for 2-2½ hours, stirring occasionally. Once cooked, the chicken should be tender enough to fall apart.

Remove the chicken from the pan, shred with two forks, then return to the pan. Stir in the drained beans (1 jar) and simmer for a further 10-15 minutes with the lid off. Add a splash of water if it thickens too much.

Meanwhile, heat the mash (1 pack) in the microwave, according to pack instructions. Spoon the mash onto plates and top with the casserole. Scatter over the crispy onions (3 tbsp) and parsley (1 handful), and serve with a dollop of soured cream (as needed), if you like.
