This warming vegan broth is just the ticket when winter cold and flu season bites. Packed with creamy yellow split peas, warming turmeric, fragrant lemongrass and greens, it’s full of goodness, fibre (4.7g per serving) and vibrant, uplifting flavours. Double up and pop half in the freezer for another day, if you like. You don’t have to pre-soak the split peas, but it helps them cook a little quicker. Soak the split peas (300 g) in cold water for 30 minutes (or longer – you can do this the night before if you prefer). Drain.

Heat a splash of oil in a large casserole dish over a medium heat and add the mustard seeds (2 tsp) and cumin seeds (2 tsp). When they start to pop, add the lemongrass (2 sticks), onion (1) and ginger (1 tbsp) with a pinch of salt. Cook for 5 minutes, until the onion is soft, then stir in the carrots (2) and turmeric (2 tsp). Cook for 1 minute.

Stir in the split peas, coconut milk (1 tin), stock pot (1) and water (900 ml). Bring to a simmer, then pop a lid on and cook for 35 minutes, or until the split peas are tender. If it looks a little too thick, add another splash of water.

Stir in the cavolo nero (100 g) and cook for a further 2-3 minutes to wilt. Add the lime juice (1), then taste to check you’re happy with the seasoning and acidity levels.

Serve in bowls with a sprinkle of the 35+ gut booster mega mix (2 tbsp).
