Preheat the oven to 220°C/200°C fan/gas mark 7. Line a baking tray with greaseproof paper. Add the squash (1 pack) and garlic bulb (1 bulb), drizzle with olive oil, season with salt and roast for 20 minutes, or until tender and golden. Set aside to cool slightly.

Meanwhile, bring a large saucepan of salted water to the boil. Add the orzo (400 g) and cook for 6-8 minutes, according to pack instructions, until tender. Drain and set aside.

Add three-quarters of the roasted squash to a blender. Squeeze the garlic cloves out of their skins and add to the blender along with the stock pot (1), the mascarpone (100 g) and 100ml water (100 ml). Blitz until smooth then season to taste.

For the topping, melt the butter (25 g) in a frying pan over a medium heat. Cook for 2-3 minutes until foaming and nutty brown. Add the hazelnuts (15 g) and sage leaves (25 g) and cook for 1-2 minutes, until the sage is crisp and the hazelnuts are toasted.

Return the drained orzo to the saucepan and stir through the squash sauce and remaining roasted squash pieces. Cook over a low heat for 2-3 minutes, stirring, until thickened and glossy.

Divide between bowls and crumble over the goat's cheese (1 pack). Spoon over the brown butter, hazelnuts and crispy sage to serve.
