Blitz the coriander (10 g), mint (5 g), sugar (1 tsp), lime juice (2), chilli (1) and salt (1/2 tsp) in a food processor until smooth. Taste to check you’re happy with the salt, spice and acidity levels, adjusting as necessary.

Bring a medium saucepan of water to the boil then turn down to a rolling simmer. Add the eggs (2) and cook for 6 minutes, then drain and plunge into cold water.

Cook the beans (1 jar) in a small pan over a medium heat for 3-4 minutes, until hot.

Toast the bread (4 slices), then spread with the butter (2 tsp). Peel and halve the eggs.

Top the toast with the beans, eggs, chutney and top that seasoning (2 tsp). Finish with a few extra coriander leaves, if you like.
