Heat a large ovenproof frying pan or casserole dish over a medium-high heat. Add a splash of oil and the mushrooms (1 pack). Cook undisturbed for 5-7 minutes, turning once, until golden. Add the leek (1), thyme leaves (2 sprigs) and a pinch of salt, then cook for 2-3 minutes, until softened.

Pour in 200ml boiling water (200 ml), add the flavour pot (1) and cream (150 ml), then simmer for 5 minutes, until slightly thickened.

Preheat the oven to 220°C/200°C fan/gas mark 7.

Meanwhile, bring a large saucepan of salted water to the boil. Add the gnocchi (1 pack) and cook for 2 minutes, or until they float to the surface. Drain, then stir into the mushroom sauce. Add the taleggio (150 g) and stir gently to combine. Season to taste.

For the topping, blitz the walnuts (60 g) and breadcrumbs (60 g) in a food processor until roughly combined. Stir through the thyme (3 sprigs), lemon zest (1) and olive oil (1 tbsp).

Scatter the walnut topping over the gnocchi mixture and bake for 15 minutes, until golden, bubbling and crisp on top.
