Heat a large, lidded saucepan over a medium heat. Melt the butter (25 g), add the onion (1) and cook for 5-7 minutes, until softened.

Meanwhile, bring a saucepan of water to the boil. Carefully lower in the eggs (3) and cook for 6½ minutes. Drain and rinse under cold water.

Stir the turmeric (1/4 tsp), curry powder (2 tsp) and bay leaves (2) into the onions and cook for 30 seconds until fragrant. Add the rice (450 g), stock pot (1), boiling water (1 L), tuna (2 tins) and ½ tsp salt. Cover and simmer for 20 minutes, until the liquid has been absorbed and the rice is tender.

Stir through the peas (150 g), remove from the heat and leave covered to steam for 5 minutes.

Peel the eggs and cut into quarters. Fluff up the rice with a fork, then serve topped with the eggs and a scattering of parsley (1 handful) and the pickles (as needed) on the side.
