Heat a splash of olive oil in a large ovenproof frying pan or shallow casserole dish. Cook the meatballs (1 pack) for 10 minutes. Remove and set aside.

Add the onion (1) to the pan and cook for 5 minutes until softened. Stir in the garlic (2 cloves), cumin (1 tsp), paprika (1 tsp) and chilli flakes (1/4 tsp), if using, and cook for 1 minute.

Add the plum tomatoes (1 1/2 tins), breaking them up with a spoon. Simmer for 8 minutes until slightly thickened. Season with salt and pepper.

Stir in the giant butter beans (1 jar), spinach (100 g) and return the meatballs to the pan. Cook for 5 minutes until everything is piping hot and the spinach has wilted.
step 5
Make four small wells in the sauce and crack the eggs (4) into the wells. Cover and cook for 5 minutes, until the egg whites are set but the yolks are still runny.

Scatter over the feta (100 g), parsley (1 handful), dill (1 handful) and lemon zest (1/2) and serve with the warm flatbreads (4).
