Bring a large saucepan filled with water to a boil. Once boiling, add in the pumpkin (325 g) and cover with a lid. Reduce to a simmer and cook for 15 minutes, until fork tender.

Preheat the oven to 180°C/160°C fan/gas mark 4.

Drain the pumpkin and leave to steam dry for 10 minutes.

Add the pumpkin to a bowl and mash with a potato masher, until smooth. In another large bowl combine the syrup (1 tbsp), brown sugar (40 g), mixed spice (2 tsp), egg (1), milk (90 ml), butter (15 g) and a pinch of salt, then add the pumpkin and stir to combine.

Add the tart case (1) to a greaseproof lined baking tray. Add the filling to the pastry case, smooth it out to the edges, and then bake for 30-35 minutes, until the filling is set with a slight wobble in the centre.

Remove from the oven and leave to cool for 15 minutes then transfer to a wire rack and leave to cool completely.

Squeeze the whipped cream (as needed) in little peaks around the edge of the pie and sprinkle over the crumbled gingerbread biscuits (10 g) and dust with the sugar and spice (1/2 tsp), if you like.
