Preheat the oven to 150°C/130°C fan/gas mark 2.

Heat the cream (600 ml), lime zest (2), orange zest (1) and vanilla pod (1) in a saucepan over a medium heat until steaming but not boiling. Remove from the heat and leave to infuse for 15 minutes.

Meanwhile, make the candied lime. Put the caster sugar (75 g) and water (75 ml) in a small saucepan and bring to a simmer. Add the lime slices (1) and cook gently for 10-15 minutes until translucent. Lift out with a slotted spoon and place on baking paper to cool completely.

Whisk together the egg yolks (6) and sugar (75 g) for the crème brûlée until combined.

Strain the infused cream over the egg mixture, whisking the mixture continuously. Stir in the tequila (2 tbsp), if using.

Divide the mixture between six 175ml ramekins and place them in a deep roasting tin. Pour hot water into the tin until it comes halfway up the sides of the ramekins.

Bake for 30-35 minutes, until the custards are just set with a slight wobble in the centre.

Remove from the water bath, cool completely, then chill for at least 4 hours or overnight.

To serve, sprinkle 1 tsp caster sugar (6 tsp) over each brûlée and caramelise with a blowtorch or under a hot grill until caramelised and golden.

Decorate with the candied lime slices and a light pinch of Margarita salt (1 tsp).
