step 1
Add the chicken thighs (1 pack) to a large bowl and add the harissa (1 tbsp), half the orange juice (2) and honey (1 tbsp) and season with salt and pepper. Mix well to combine.
step 2
Add a splash of oil to a large deep-lidded pan over a medium heat. Add the chicken thighs, skin side down, and cook for 8 minutes until the skin is golden.
step 3
Flip the chicken over and add the red onions (1) and cook for a further 3-4 minutes, until the onion softens. Add the butter beans (1 jar) and the remaining orange juice (2), cook for an extra 2 minutes.
step 4
Dissolve the chicken stock (1) in the boiling water (250 ml) then add to the pan. Bring to a boil then reduce the heat and simmer for 15 minutes with a lid on. Remove the lid and simmer for a further 5 minutes.
step 5
Meanwhile, place the potatoes (1 kg) in a large pan of salted water. Bring to the boil and cook for 15-18 minutes, or until fork tender.
step 6
Drain the potatoes and mash with the garlic and herb butter (40 g), adding a little milk to loosen if needed. Season to taste with salt and pepper.
step 7
Pierce the green beans pack (2 packs) pack and microwave according to pack instructions for 1 minute 15 seconds.
step 8
Serve the mash with the chicken thighs on top with the sauce and beans and the green beans on the side. Scatter with some chopped parsley (1 handful) and a sprinkle of the top that seasoning (as needed).
