Preheat the oven to 190°C/170°C fan/gas mark 5 and line a loaf tin (1.2L, 21 x 11 x 6cm) with greaseproof paper.

Mash three of the bananas (3) in a large bowl until mostly smooth. Add the yogurt (250 g), eggs (3), honey (1 tbsp) and olive oil (1 tbsp), then whisk until well combined.

Add the flour (100 g), oats (120 g), mixed seeds (4 tbsp), baking powder (1 tsp), bicarbonate of soda (1/2 tsp) and salt (1 pinch). Fold gently until just combined, taking care not to overmix. Fold through the chocolate (50 g), if using.

Spoon the mixture into the prepared loaf tin and smooth the surface. Cut the remaining banana (1) in half lengthways and place on top.

Bake for 45-55 minutes, or until risen, golden and a skewer inserted into the centre comes out clean. If the top starts to brown too quickly, loosely cover with foil for the final 10-15 minutes.

Leave to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Serve warm or toasted with a dollop of Greek yogurt (as needed) and a drizzle of cashew nut butter (as needed), if you like.
