Blitz the broccoli (1 head) to form chunky crumbs in a food processor and add to a large bowl.

Grate the courgette (1) with a coarse box grater, then pop onto a large piece of kitchen paper or in a dry tea towel and thoroughly squeeze out any excess water (the fritters will be soggy otherwise, so don’t be tempted to skip this step).

Add the courgette to the bowl with the broccoli, then stir in the coriander (5 g), mint (5 g), parsley (5 g), lemon zest (1) and everything seasoning (1 tbsp). Cut the lemon into wedges and set aside.

Stir in the eggs (2) and flour (4 tbsp), then season well with salt and pepper. Mix together so you have a thick batter.

Drop tablespoonfuls of the batter into your air fryer basket then spray with oil (as needed) (you may need to work in batches, depending on the size of your air fryer). Cook at 180°C for 10 minutes, then flip, spray with a little more oil, and cook for a further 5-10 minutes, until golden brown. Alternatively, cook in a splash of oil in large non-stick frying pan over medium heat for 3-4 minutes on each side.

Meanwhile, separate the leaves of the little gem (2 heads), and thinly slice the core. Dress with half of the green goddess dressing (1/2 pack), saving some to drizzle on the fritters.

Serve the fritters with the whipped feta (4 tbsp) and the green goddess salad, plus a wedge of lemon, and an extra drizzle of dressing (1/2 pack).
