Fry the bacon (8 rashers) on each side for 3-4 minutes, until crispy. Set aside on kitchen paper and roughly chop.

In the same pan, add the panko breadcrumbs (5 tbsp) and ½ tsp garlic granules (1/2 tsp) and heat on a medium heat until golden.

Add the chicken mince (500 g) to a bowl along with the remaining garlic granules (1 tsp), onion granules (1 tsp) and dried thyme (1 tsp). Season with ½ tsp of salt.

Press a thin even layer of chicken mince onto one side of each taco (8).

Heat a frying pan over a medium heat and place a taco chicken-side down. Cook for 3 to 4 minutes until golden and the chicken is cooked through. Flip and toast the tortilla side for 1 to 2 minutes. Repeat this process on the remaining tacos.

Top each taco with lettuce (1/2), chopped bacn, Caesar dressing (as needed), panko breadcrumbs and parmesan (as needed).
