Preheat the air fryer to 200°C and cook the chips (150 g) for 8–10 minutes until crispy. Alternatively, preheat the oven to 220°C/200°C fan/gas mark 7 and cook for 22–24 minutes until crispy.

Add the red onion (1) to a bowl with half the sumac (1 tsp), juice from half a lemon (1/2) and season with salt and pepper. Mix well and set aside to soften.

In a small bowl, mix the Greek yogurt (4 tbsp) with the juice from half a lemon (1/2), a drizzle of olive oil, salt and pepper. Set aside in the fridge.

Add the beef mince (1 pack) to a bowl with the cumin (1 tsp), smoked paprika (1 tsp), oregano (1 tsp), remaining sumac (1 tsp) and garlic granules (1 tsp). Season with salt and pepper and mix well to combine.

Press a thin even layer of beef mince onto one side of each taco (8).

Heat a frying pan on a medium-high heat and place a taco beef-side down.

Cook for 3 to 4 minutes until golden and the beef is cooked through. Flip and toast the tortilla side for 1 to 2 minutes. Repeat with the remaining tacos.

Top each taco with yogurt sauce, sumac onions, diced tomato (1) and chips. Finish with extra sumac, chopped parsley (1 handful) and the remaining lemon (1) cut into wedges to serve.
