Add the prawns (400 g) to a food processor or high powered blender, along with 1 tbsp soy sauce (1 tbsp), fish sauce (2 tsp), 2 tsp sesame oil (2 tsp) and then blitz until it forms a paste.

In another bowl, toss the sliced cucumber (2/3), spring onions (4) and mango (1) with everything seasoning (3 tsp) and the remaining soy sauce (1 tbsp) and sesame oil (1 tsp). Set aside to lightly pickle.

Spread a thin, even layer of the prawn mixture directly onto one side of each taco (8), pressing it right to the edges.

Heat a frying pan over medium-high heat and lightly oil the pan.

Place the tacos prawn-side down in the pan and cook for 3-4 minutes until the prawn layer is golden. Flip and toast the other side for 1-2 minutes until warm and slightly charred.

Assemble with the cucumber, mango and spring onion salad, then finish with chilli oil (to taste) and everything seasoning.
