Tom’s baked greens and ricotta pasta shells

Recipe
Big on comfort and packed with greens, this is Tom Kerridge’s take on a family-style pasta bake that doesn’t hold back on flavour. Tender conchiglioni are filled with a rich ricotta and green veg mix, then baked in a generous layer of Our rich Tomato and Basil Pasta Sauce until bubbling and golden. Finished with melting mozzarella and parmesan, it’s a hearty, oven-baked dish made for sharing, with warm garlic flatbreads on the side.

step 1
Preheat the oven to 180°C/160°C fan/gas 4. Bring a large pan of salted water to the boil and cook the pasta (200 g) for 6 minutes until just tender. Drain and run under cold water to cool, then turn out onto kitchen paper and leave to dry.
step 2
Melt the garlic and herb butter (50 g) with a drizzle of olive oil in a large frying pan.
step 3
Add the chopped green veg (1 pack) and cook for 4-5 minutes until softened but still vibrant. Season well, then spread onto a tray and chill briefly until cool.
step 4
In a bowl, mix the ricotta (1 tub), egg (1), nutmeg (1/2) and half the Parmesan (20 g). Stir through the cooled greens and spinach (375 g), season, then spoon the mixture into the pasta shells.
step 5
Spoon 1 jar of the pasta sauce (2 jars) into the base of a large ovenproof dish (36 x 22cm). Arrange the filled shells on top, then spoon over the remaining sauce. Lay over the mozzarella (1 pack) and scatter with the remaining Parmesan (20 g).
step 6
Bake on a high shelf for 20 minutes until bubbling, then finish under the grill for 5 minutes until golden and melted. Bring to the table and serve with warm garlic flatbreads (1 pack).
