Method

step 1
Add the potatoes (1 bag) to a large pot of salted water and bring to the boil. Cook for 20 minutes, or until fork-tender. Drain and leave to steam for 5 minutes.
step 2
Preheat the oven to 220°C/200°C fan/gas mark 7. Line one or two large baking trays with parchment paper.
step 3
Tip the potatoes onto the tray, leaving space between each one. Using the back of a fork, gently squash each potato (the thinner they are, the crispier they’ll become).
step 4
Drizzle over the olive oil (2 tbsp), scatter with the garlic granules (2 tsp) and season with salt and pepper. Roast for 35-40 minutes until golden and crisp.
step 5
When the potatoes have about 10 minutes left in the oven, remove the steaks (2) from the fridge to bring it up to room temperature, pat dry and season liberally with salt and pepper.
step 6
Remove the potatoes from the oven and leave to cool for 10 minutes.
step 7
Once the potatoes are cooled, add them to a large salad bowl with the rocket (1 bag), sweetcorn (1 tin), avocado (2), dill (4 sprigs), spring onions (1/2 bunch) and crispy onions (2 tbsp). Drizzle with the green goddess salad dressing (1 sachet) and toss together. Finish with the lemon-infused olive oil (2 tbsp).
step 8
Heat a large frying pan over a medium heat and add the cowboy butter (20 g). Once it’s hot, add the steaks and cook for 2-6 minutes, according to pack instructions (depending on how you like it cooked).
step 9
Remove the steaks from the pan and leave to rest for 5 minutes. Slice the steak and top with the juices from the pan and serve alongside the smashed potato salad.
