You will need 4 pre-soaked bamboo skewers

Thread 1 square of halloumi (2 packs) each pre‑soaked bamboo skewer, followed by a Padrón pepper (1 pack). Repeat twice so each skewer has 2 pieces of halloumi and 2 peppers.

Add the cherries (200 g), jalapeños (2), lemon juice (1) and extra virgin olive oil (2 tbsp) to a large mixing bowl. Season with salt and pepper and leave to infuse while you cook the skewers.

Place the halloumi skewers onto a preheated barbecue or grill pan. Cook for 3-4 minutes on each side, or until the halloumi is golden and the peppers are blistered. Once cooked, drizzle with the hot maple syrup (2 tbsp).

When the skewers are nearly ready, add the rocket (30 g), parsley (25 g), coriander (25 g) and salted almonds (20 g) to the cherry mixture and toss gently to coat.

Serve the warm skewers alongside the herby cherry salad.
