Preheat a gas barbecue to medium-high or light your charcoal barbecue until the coals have burnt down and are covered in grey ash. You’ll need to do this about 30 minutes before you plan to cook.

Add the yogurt (200 g), turmeric (2 tsp), ground cumin (1 tsp), smoked paprika (1 tsp), garlic paste (1 tbsp), olive oil (1 tbsp), the juice from 1 lime (1) and salt (1 tsp) to a large mixing bowl. Mix well and season to taste, then add the chicken thighs (1 kg) to coat. Leave to marinate for at least 1 hour, but ideally overnight, covered in the fridge.

Add the chicken thighs, smooth side down, to your barbecue, and leave to cook for 8-10 minutes with the lid on. Using barbecue tongs or a metal spatula, pry the chicken thighs from the grill and flip them over. Cook for a further 8-10 minutes with the lid down, until golden brown and cooked through and the juices run clear.

Alternatively, heat a grill pan over medium-high heat and add the chicken thighs smooth side down and cook for 8-10 minutes, and then flip over and cook for a further 8-10 minutes, until cooked through and the juices run clear.

Meanwhile, cut the remaining limes (3) in half and brush them with olive oil. Add to the grill, cut side down, and cook for 2-3 minutes until charred.

Add the cooked chicken to a large serving platter, alongside the flatbreads (2 packs), pickled onions (1 pack) and grilled limes.
