For the cabbage salad, whisk the mustard (2 tsp), lemon juice (1/2) and olive oil (2 tbsp) in a large bowl and whisk. Slice the cabbage (1/2) as finely as possible and toss in the dressing. Finally, mix in the chopped parsley (3 sprigs).

Heat a large saucepan over a medium-high heat. Add the pears (3), ginger (1 tsp), garlic (1 tsp), chilli (1 tsp), balsamic vinegar (2 tbsp), honey (2 tbsp) and 1 tbsp of water. Simmer until nicely reduced and sticky, then mash the pears with a masher and set aside.

Preheat the oven to 220°C/200°C fan/gas mark 7. Add the chunky chips (400 g) to a baking tray and bake for 15-18 minutes, until golden and crisp.

Meanwhile, slice the chicken breast (2) into strips. Add the parmesan (1 tbsp), sesame seeds (3 tbsp), cayenne pepper (1 tsp) and crushed cream crackers (150 g) to a large mixing bowl. Season with salt and pepper.

Add the flour (200 g) to another large bowl and the beaten eggs (3) to a third bowl. Coat the chicken strips in the flour, then the eggs and finally the cracker mix.

Heat your air fryer to 200°C. Preheat for 3 minutes, then add the chicken pieces. Spray with oil and bake for 15 minutes, turning once halfway, until golden and crisp. If you don’t have an air fryer, heat a large frying pan over a medium-high heat with a generous glug of oil (as needed). Once hot, carefully lower the chicken pieces into the oil and cook for 6-7 minutes on each side, until golden brown and cooked through. To check it’s cooked, cut a large piece in half – if the juices run clear, it’s ready.

Place the lemon mayo (3 tbsp) in a serving bowl, then mix in the parsley (3 sprigs) and mustard (1 tsp).

Serve the chicken goujons alongside the chips, pear jam and lemon mayonnaise.
