Packed with nuts, seeds and flavour-boosting extras, they’re great sprinkled over everything from porridge, yogurt or smoothie bowls to soups and curries. Make a batch at the start of the week and keep it on hand for a simple plant diversity boost at every meal. 1 serving is 1 tbsp.

Author's notes

Use 1 tbsp for 1 serving. Keep an eye on the nuts and seeds towards the end of roasting as they can colour quickly. Leave them to cool completely before transferring to an airtight container to help them stay crunchy.

step 1
Preheat the oven to 180°C/160°C fan/gas mark 4.
step 2
For the sweet version, add half the mixed seeds (250 g) half the pistachios (100 g), half the pecans (100 g), coconut (25 g) and a little olive oil to a greaseproof-lined baking tray and bake for 10-12 minutes, until lightly roasted. Stir through the dried cherries (100 g) and cinnamon (2 tsp) then leave to cool. Store in an airtight container for 1 week.
step 3
For the savoury version, add the remaining mixed seeds, remaining pistachios, remaining pecans, fennel seeds (1 tsp), and nigella seeds (1 tsp) to a greaseproof-lined baking tray and drizzle with a little olive oil. Roast for 10-12 minutes, until lightly roasted. Stir through the mixed herbs (1 tsp) and salt (1 tsp) and then leave to cool. Store in an airtight container for 1 week.
