Author's notes

Give the carrots plenty of room on the roasting tray so they roast and caramelise rather than steam. Make the dal and coriander chutney up to a day ahead and keep them covered separately in the fridge. Reheat the dal thoroughly before stirring through the roasted carrots, and serve the chutney cold.

Method

step 1
Preheat the oven to 220°C/200°C fan/gas mark 7.
step 2
Add the carrots (200 g) to a large roasting tray. Drizzle with olive oil, season and toss to coat. Roast for 20 minutes, until tender and lightly caramelised.
step 3
Meanwhile, heat a large saucepan over a medium heat. Add a glug of oil, then the garlic (2), half the ginger (5 cm), curry powder (2 tbsp), garam masala (1 tbsp) and tomato purée (2 tbsp). Cook for 2 minutes, stirring, until fragrant.
step 4
Add one of the jars of jar of lentils (2 jars) along with its liquid. Drain the other jar and add the lentils to the pan along with the coconut milk (1 tin). Stir well and simmer for 15 minutes, until thickened slightly.
step 5
Stir through the roasted carrots and cook for a final 5 minutes. Season to taste.
step 6
Meanwhile, put the coriander (15 g), mint leaves (25 g), chilli (1) (if using), remaining ginger, lemon juice (1/2) and yogurt (30 g) into a food processor and blitz until smooth. Season to taste.
step 7
Heat the rice (2 packs) for 2 minutes in the microwave, according to pack instructions, if using. Divide the rice and dal between bowls and spoon over the coriander chutney to serve.
