Method

step 1
Trim 1cm from the top of the Cannonball onion (2) and peel. Place root-side up and, being careful to keep the root intact, cut down through the sides of the onion to create 16 petals. Turn over and gently separate the layers.
step 2
Put the flour (120 g) and cornflour (60 g) in a large bowl with ½ tsp of salt. In a separate bowl, whisk together the milk (200 ml) and eggs (2).
step 3
Mix the Southern fried seasoning (3 tbsp) with the breadcrumbs (120 g) Dust the onion all over with the flour, lifting the petals so it reaches between the layers. Pour over the egg mixture, ensuring it coats the onion evenly, then sprinkle over the seasoned mix.
step 4
Chill for 10 minutes while you preheat the air fryer to 180°C.
step 5
Generously spray the onion all over with oil, including between the petals. Place on a small piece of foil and air fry for 15-18 minutes, spraying with a little more oil halfway through, until golden and crisp.
step 6
Add the mayo (100 g) a bowl and mix with the pickles (40 g) and 1 tbsp pickle brine.
step 7
Carefully transfer the onion to a serving plate and serve with the pickle mayo.
