Author's notes

Leaving the skin on the sweet potatoes not only adds extra fibre but also means the potatoes will hold their shape more and bring additional texture to the dish.

step 1
Preheat the oven to 200°C/180°C fan/gas mark 6.
step 2
Thinly slice half of one of the onion (2) and add to a small bowl with the juice of one of the lime (2) and ½ tsp salt. Scrunch together with your fingers then set aside.
step 3
Roughly chop the remaining onions and add to a large, deep roasting tray along with the red pepper (1), sweet potato (350 g) and beef mince (500 g). Season with salt and pepper and drizzle with oil, then roast for 15 minutes.
step 4
Remove from the oven and stir in the chipotle paste (1 tbsp), cumin (2 tsp), coriander (1 tsp), cinnamon sticks (2), green lentils (1 jar) and chopped tomatoes (1 tin). Fill the empty tomato tin with 100ml water and add this too. Season with salt and pepper.
step 5
Cook for a further 20-25 minutes, or until the sweet potatoes are cooked through and the sauce has reduced.
step 6
Serve with the pickled onions, lime wedges and soured cream (4 tbsp), if you like.
