Cheat's panettone semifreddo recipe

Recipe
Use up leftover panettone in this easy Christmas semifreddo recipe. Rich mascarpone, whipped cream, Kirsch-soaked cherries and chocolate panettone come together for a dessert that looks and tastes impressive but is very easy to make. Better yet, it can be prepped ahead and stored in the freezer, ready to be adorned with chocolate shavings and served to lots of ‘oohs’ and ‘aahs’ from your guests.

Author's notes

Make sure you give the semifreddo time to soften slightly before serving. This is a great dessert to make ahead of time – up to three weeks – and stash in the freezer for the busy festive season.

Method

step 1
Line a 1kg loaf tin with a double layer of cling film, allowing plenty of overhang around the edges.
step 2
Whisk the double cream (500 ml) to soft peaks. In a separate bowl, whisk together the mascarpone (250 g), icing sugar (125 g) and vanilla extract (1 tsp) until smooth. Fold the whipped cream into the mascarpone mixture until no streaks remain.
step 3
Fold through the chopped dark chocolate (50 g).
step 4
Add a third of the cream mixture to the base of the lined tin, followed by half of the panettone (300 g), pressing them into the cream. Repeat with another layer of cream, then the remaining panettone, finishing with the cream mixture.
step 5
Gently tap the tin on the work surface to remove any air pockets. Fold the overhanging clingfilm over the surface of the semifreddo and freeze for at least 4 hours, or overnight, until firm.
step 6
Remove and turn out onto a serving plate, then peel away the cling film. Leave to soften for up to 30 minutes, then top with chocolate shavings to serve.
