Author's notes

The cooking times for cod can vary a little depending on the thickness of your fish. You’re looking for an opaque white colour and flaking texture.

Method

step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Bring a large pan of salted water to the boil and cook the potatoes (1 kg) for 15 minutes, until just tender.
step 2
Drain the potatoes and carefully add to a large baking tray. Use the back of a mug to gently crush them – increasing the surface area will make them extra crispy. Season with salt and pepper, then roast for 15 minutes. Remove from the oven and gently turn with tongs.
step 3
Season the cod (4) fillets with salt, then spread the chimichurri (4 tbsp) over them and top each with a spoonful of breadcrumbs (50 g). Nestle inside the tray with the potatoes, then cook for a further 10-12 minutes, until the cod is cooked through and opaque.
step 4
While the potatoes are cooking, prep the slaw. Finely slice the cabbage (1) and thinly slice the fennel (1 bulb), discarding the core and reserving the green fronds. Slice the peel from three of the easy peelers (4) and cut into moon shapes. Mix everything together in a large bowl with a pinch of salt, scrunching in the salt with your hands. Allow to sit for 5 minutes.
step 5
Squeeze the juice from the remaining easy peeler into a small bowl and combine with the mustard (1 tsp), vinegar (3 tbsp) and olive oil (3 tbsp). Pour over the slaw, stirring generously. Stir through the reserved fennel fronds.
step 6
Serve the cod with the potatoes and slaw, and an extra drizzle of chimichurri, if you like.
