Author's notes

Make sure you blend the cottage cheese before adding it to the soup, and don’t add it when the soup is too hot, else it might split. This soup base freezes brilliantly. Prepare it ahead and store in a zip-lock bag in the freezer. Simply thaw, reheat and stir through the cooked pasta to serve.

Method

step 1
Heat a splash of oil in a large casserole dish over a medium heat and add the soffritto (250 g). Cook for 5-7 minutes, then add the tomato paste (1 tbsp) and cook for a further minute. Stir in the chopped tomatoes (2 tins) and cook for 2 minutes, then refill both tins with water and add to the pan. Season with salt and pepper.
step 2
Bring to a simmer, then cook over a gentle heat for 15 minutes, until the veg is soft and the soup has reduced slightly. Blitz with a hand blender until smooth, then remove from the heat and allow to cool a little.
step 3
Blitz the cottage cheese (3 tbsp) separately until smooth, then stir into the soup (be careful not to do this when the soup is too hot, as it can split).
step 4
Meanwhile, bring a large pan of salted water to the boil and cook the pasta (250 g) for 8-10 minutes, until al dente, then drain.
step 5
Preheat the grill to medium. Spread a spoonful of chutney (8 tsp) onto each slice of baguette slices (1/2) then top with grated cheddar (40 g). Grill for 5 minutes, until golden and bubbling.
step 6
Stir the drained pasta into the soup.
step 7
Serve the soup in bowls with the cheesy croutons on the side and a drizzle of olive oil on top.
