Author's notes

Wet your hands slightly before shaping the fishcakes into patties – this will make them easier to handle.

Method

step 1
Bring a large pan of salted water to the boil and add the potatoes (400 g). Reduce to a simmer then cook for 15-20 minutes, until completely tender. Drain, mash, then allow to cool slightly before mixing with the tuna (1 tin), spring onion (5), curry paste (1 tbsp) and mayo (2 tbsp).
step 2
Shape into eight fishcakes, then chill in the fridge for 10 minutes to firm up.
step 3
While the fishcakes are chilling, make the salad. Cook the green beans (200 g) in a pan of salted water for 5-7 minutes, until tender. Drain and toss with the tomatoes (200 g), peanuts (50 g) and nuoc cham dipping sauce (1 tbsp). Set aside.
step 4
Blitz the bread (3 slices) in a food processor to form crumbs. Add to a shallow bowl, and add the eggs (2) to a separate shallow bowl. Dip the fishcakes into the egg, then the breadcrumbs, until well coated.
step 5
Heat a splash of vegetable or sunflower oil in a large non-stick frying pan over a medium heat. Cook the fishcakes for 2-3 minutes on each side, until golden.
step 6
Swirl the mango dipping sauce (to taste) through a little extra mayonnaise. Serve with the fishcakes and green bean salad.
