Preheat the oven to 200°C/180°C fan/gas mark 6. Spread the potato wedges (750 g) out onto a greaseproof lined baking tray and cook for 20 minutes, turning halfway, until golden and crispy.

Meanwhile, remove the pork (1 pack) from the packaging, reserving the sauce sachet. Place the pork in a microwaveable dish, cover and cook on high for 6 minutes. Leave to stand for 2 minutes, then shred with two forks.

Scatter half the cheese (120 g) over the wedges, spoon over the pork and sauce sachet, then top with the remaining cheese.

Return to the oven for 3-5 minutes, until the cheese has melted.

Dollop over the sour cream and chive dip (100 g), then scatter with the spring onions (4), avocado (1/2), coriander (1 handful), chilli (1) (if using) and gherkins (as needed) and then serve immediately.
