Mix the coffee (350 ml) and amaretto liqueur (75 ml) together in a shallow bowl or jug and set aside.

Separate the eggs (4). Place the egg yolks and 40g of the caster sugar (40 g) in a large bowl. Whisk using an electric whisk for 3-4 minutes, until pale, thick and mousse-like. Add the mascarpone (2 tubs) and whisk until smooth.

In a separate clean bowl, whisk the egg whites to soft peaks. Gradually add the remaining 40g caster sugar (40 g), whisking until glossy and stiff peaks form.

Fold one third of the egg whites into the mascarpone mixture to loosen, then gently fold through the remainder until fully combined.

Briefly dip half of the panettone (250 g) into the coffee mixture and arrange in a single layer in the base of a 20cm square baking dish. Spoon over half of the mascarpone mixture and spread into an even layer. Dust with half of the cocoa powder (25 g).

Soak the remaining panettone (250 g) and layer on top of the cocoa powder, followed by the remaining mascarpone mixture, smoothing the top.

Cover and chill overnight, or for at least 6 hours.

Just before serving, generously dust with the remaining cocoa powder (25 g) and serve.
