Take the steaks (2) out of the fridge at least 20 minutes before starting. Brush the steaks with a little olive oil and season with salt. Heat the air fryer to 240°C (or its highest setting) and sear the steaks for 3 minutes. Remove them from the air fryer and leave to rest for 5 minutes, then brush with the Dijon mustard (2 tsp).

Lay the prosciutto (1 pack) in a criss-cross pattern, using the plastic from the pack to help you lift the slices out. Pop the steaks on the prosciutto, then top with a heaped tablespoon of pate (1 pack). Fold the prosciutto on top of the steak and pâté, encasing the filling.

On a lightly floured surface, gently roll out the puff pastry sheet (1 pack) widthways until it’s 27cm wide. Add the steak and prosciutto parcel to the short end of the pastry, then wet your finger and mark a border around the steaks. Fold the pastry on top, then seal around the border using your fingers. Trim away the excess pastry, leaving a 1cm border, then crimp with a fork.

Transfer to the fridge for at least 30 minutes.

Line the base of your air fryer with greaseproof paper, slightly smaller than the internal tray. Brush the pastry with the egg (1), then air fry at 180°C for 15-18 minutes for medium, or 20 minutes for well done.

Transfer to a wire rack for 5 minutes to rest before serving. Serve with your favourite roast trimmings.
