Add the mushrooms (15 g) to a small bowl and cover with 200ml boiling water (200 ml). Set aside.

Heat the butter (50 g) with a splash of oil in a medium saucepan over a medium heat. Add the onion (1), carrots (2) and celery (2 sticks) with a pinch of salt, then add the thyme (5 g), rosemary (5 g) and bay leaf (1). Cook for 7-10 minutes, until softened.

Dissolve the red wine flavour pot (1) in the remaining 500ml boiling water (500 ml). Add to the vegetables along with the red wine (200 ml).

Remove the mushrooms from the water and roughly chop. Add to the pan, then add most of the mushroom soaking liquid, being careful not to add the gritty bit at the bottom. Stir in the Marmite (1 tsp).

Bring the mixture to a gentle simmer, then cook for 20 minutes, or until the vegetables are tender and the sauce has reduced. Remove and discard the rosemary stalks and the bay leaf.

Mix the cornflour (2 tbsp) with 1 tbsp water to form a paste, then stir into the pan and cook for 2-3 minutes, stirring, until thickened. Stir in the cranberry sauce (1 tbsp), then carefully tip into a blender and blitz until smooth.

If you’re happy with a slightly more rustic texture, serve as is. If you prefer a finer, silkier gravy, pass through a fine sieve.
