Heat a large casserole dish over a medium-high heat. Add a splash of olive oil, then the leeks (2) and sweet potatoes (450 g). Cook for 5-7 minutes, stirring occasionally, until the leeks have softened.

Stir in the coconut and lime seasoning (3 tbsp), vegetable stock pot (1), coconut cream (1 tin) and 800ml water (800 ml). Bring to a gentle simmer.

Add the basa (2 packs) and sweetcorn (200 g), then reduce the heat to low. Simmer for 5-7 minutes, or until the fish is cooked through. Season to taste. Put the cornflour (1 tbsp) in a small bowl and whisk in 1 tbsp of cold water. Add this to the pan and simmer for 1-2 minutes, until thickened slightly.

Serve in bowls with lime wedges (1) on the side for squeezing over.
